I don't know what it is about this particular knife. I have no trouble sharpening my other Global knives. I also do a fine job with my Wusthof, F. Dick and others. I think the weight of this knife is also a bit light for a chef's knife. I love the santoku and the next size down from there. They are a great weight and balance.
