
I bought the Wusthof Classic Hollow Ground 8" Chef's knife, along with a Wusthof 7" santoku from a local store. I was planning to use the heavier chef's knife for chopping and dicing vegetables, and the santoku for more delicate slicing. However the chef's knife is well balanced enough that I can use it for all my tasks, and I rarely need to bring out the santoku. It is heavy enough to cut through onions and carrots with barely any force. And balanced enough for trimming and thinly slicing meats.
