J.A. Henckels MIYABI 7000D Gyutoh 9-1/2-Inch Knife Top Quality


I expected a product to rival the Shun and The Global, instead what I found was laughable. Sure the steel is hard and the blade is sharp, but the weight of the knife is just ridiculous and the balance is just plain awkward. Where the Shuns and Globals have made Japanese knifemaking an art Miyabi has created a mutant. Henckels has always made the heaviest knives, but here where subtlety and tact were required they just went with the old play book.
