Order Shun Elite 4-1/2-Inch Wide Cook's Knife


I received this knife as a Christmas gift and it is my very first taste of Shun. As an avid cook, I can't begin to say how excited I was to get my hands on such a highly regarded knife as a Shun. Now THIS is a knife for a true cook. I have several knives of varying quality, ranging from the German steel of a Wusthoff to the less expensive (but very respectable) Forschner, and nothing, and I mean NOTHING cuts like a Shun. Sharp does not even begin to describe the steel of a Shun knife. This blade sails through an onion almost as easily as butter and it is an absolute joy to use. The handle feels comfortable in my hand, it's incredibly well balanced, it has ample knuckle clearance, and it is of the perfect weight in my opinion...not too heavy, not too light. It feels so natural in my hand. And let's face it, it's a gorgeous knife, as well. The swirly pattern in the steel remniscent of a samurai sword...it's kitchen art!

So why not a 5 star rating? Unfortunately, the short blade of this knife is just not long enough to be truly useful to me. I almost always use my 8 inch chef's knife or my 7 inch santoku, but the long blade of those is just too long when I only want to do small tasks like chopping garlic or mincing up a handful of herbs. I hate lugging out my large cutting boards for those little tasks, but my large knives are too big on my smaller cutting boards. I thought this 4 and a half inch Shun would be perfect for those little jobs when I only wanted to use my small boards. Unfortunately, however, the stubby blade is much too short to get a true continuous rocking motion, which is how I chop, and therefore I am finding this beautiful Shun collecting dust in my knife block. For those who don't mind using sharp up and down chopping movements, then this will not be an issue, but for me, it's just not serving the purpose I intended it to have. But I don't think this Shun will be lonely for too long. After a taste of this amazing Japanese steel, you can bet it will have company in my kitchen very soon! I haven't really heard about ceramic cutlery before my friend told me about it. She was really excited about how sharp, easy to wash, and health-conscious they are. First a little background. I have always been interested in cutting utensils; own tons of pocket and hunting knives so a few months ago decided to upgrade the kitchen cutlery from a Sabatier starter set.

Kicked off with a Farberware 23 piece classic forged set. From there have added knives from Anolon (a 9 piece set and Santoku), Calphalon (Katanta), Henckels, Sabatier, and Wusthof. Also bought a Waring electric knife sharpner so I did not have to Lansky when steeling did not bring back the edge. I mean anything worth doing is worth overdoing. The only knife I wanted to add I did not have was a 10 inch chef.

Looked around and decided to try the Mundial. The granton edge Future at Amazon was easily the best price anywhere on a forged 10 inch chef (even less than most stamped) and since I did not have a metal handled knife this was easy choice.

When I unpacked was literally "love at first sight". Balance was just right, handle felt great, edge was extremely sharp and smooth, blade had a nice bell ring and over-all appearance was in a word awesome. Makes you want to slice, dice, cut, carve, puree and peel.

Probably best said quoiting a surgeon friend of mine who is no stranger to a cutting instrument; this is an awesome piece of steel just makes you want to go out kill a deer and start processing. Sorry to some folks but to a lot of us PETA is people eating tasty animals.

PROS:
This is a good general-use knife and is sharp enough to chop most vegetables and meats... It also has a pretty good and comfy handle.
Easy to resharpen and remove dings on a whet stone due to soft metal.

CONS:
Very flimsy and soft metal is used in the knife's construction. I have seen this knife's blade dent because of cutting a simple thing such as a prailine (which a standard Whustof or Henkels would not do for not much more money).

OVERALL:
This is absolutely an ameture housewife knife. NOT good for industrial work at all. It is, though, a decent "back-up" knife if there is something to hack-up that you dont want your more expsneive knives (assuming the reader works in an industrial kitchen) to touch or possibly get damaged.

My advice, pay an extra 20 bucks and buy a low-mid range Whustof or Henkels... something that is not stamped steel and has a full tang.

I finally decided to get top quality knife, to replace my Chicago Cutlery 8"
chefs knife (I got tired of sharpening it every other week).
It was supposed to come 5 days after it shipped, but I got it in two, it came in a nice black box, sharp and ready for work.
So far I can tell you it is worth every penny, now I can do large volume of work with little effort. Chopping, dicing, slicing etc is easy due to the heftiness and sharpness of the knife. I remember watching a video on YouTube of some guy slicing a piece of paper in very thin horizontal strips with a Shun, well let me tell you that this knife can do the same with ease.
The handle is very comfortable for me, I have large hands, but it fits perfectly well in them.
Blade is about 2 " wide, very sharp and can cut through anything with ease, for example I was able to cut onions in almost transparently thin slices. The heftiness helps a lot with cutting and when doing big volume jobs because it saves effort pushing down with the knife.
Balance is great,when I hold the knife with the pinch grip with two fingers right before the bolster it maintains perfect horizontal position. Size is also good, I didn't really expect it to have a mini-sword like look, but the definitely impresses.
I find the standard block set sharpening steel to be highly inefficient, so I use Kyocera 9-Inch Ceramic Sharpener. This sharpened hones as well as sharpens the knife and keeps the edge rasor sharp.

I got this along with 6 other knives in the under $200 a set range, its definitely at the top of my list, an excellent knife. I have washed in the dishwasher many times with electrasol gel "all in one" packs, no rust or spots. I wouldn't wash in a dishwasher that did not have a drying cycle, nor would I pre-soak in sink/glass as hi carbon will rust if you keep it wet long enough. I set it on a plate and it goes right in the dishwasher

Pros: well designed, simple, can be VERY sharp, holds edge well, eno rust or spots in dishwasher.

Cons: came fairly sharp, but needed sharpening

This knife is by far the best knife I have ever used. As the 'workhorse' of any kitchen this chef's knife is versatile. Both form and function are exquisite. If you can, try out this knife first at your local culinary store... some may not like the feel of the handle.

I cook 3-4 times a week and have not had to sharpen this knife in over one year. The blade is increadible. Make sure that you maintain it with a few swipes on a steel before each use. I have Wustof, Schaff, Henkel (all german), and Sabatier carbon steel (French) and prefer this knife over all of them. That is surprising considering the quality of those knives. This particular knife is part of the Global forged line. I really appreciate the weight and balance of these knives. It would take a little for me to get used to some of their other (lighter)knives, but from what I know, the blade performance in the additional lines is equally unmatched.

As a retired chef, I found this knife to be about the middle of the road in both balance and performance. Yes, it does show rust spots if you air dry it but not every time. I make it a habit to towel dry all of my knives to eliminate water spotting. I clean with Bon Ami to eliminate rust spots that may appear but only with very light pressure as to not scratch the patina of the blade.

This knife holds it's edge also in the middle of the road. I sharpen it a bit more frequently than other more expensive knives I own. I have given this whole set as gifts because it is so pretty but I would consider giving less knives of a higher quality to an avid cook where these would be used daily.

I own an older 'non hollow' version of this knife. I guess the hollow groves are so that vegetables don't stick. Mine seems to work just fine without the hollow groves. I am very impressed by the quality of the Henkels Four Star series. The ice hardened blade is very sharp. It does need a sharpening steel for regular maintenance. The blade is great for cutting raw meat and vegetables, but a bit thin for chopping frozen meat or bone. It's not a Cleaver. The one piece handle is very durable and dishwasher safe. I don't have to worry the handle coming loose. I was worried about that with the Five Star series. The Santoku shape is very versatile. I considered buying other Henkels knives, but this one is so versatile that I don't really need to. I've had mine for 7 years and it's still a great knife. The chinese blade originated from battlefield when soldiers needed a durable, easy to sharpen blade for cooking; so they broke a sword in half, and created the modern chinese cleaver. Modern chinese blades reflect those traditions because the chinese knives are heavy and have a thick spine to break bones, or to tenderize meat. The weight of the blade is too light, so it's good for home chef for light-duty cooking. The blade is extremely sharp, so sharp that I've chipped the blade when cutting chicken. I understand that chef's would rather treat the Shun blade as a chef's knife, but it would take away the original practicality of the chinese blade and there are better alternatives from japanese chefs knives.

The reason why I rated it so low is because:
1) VG steel is very hard to resharpen
2) Long and thin handle is good for small hands, but impractical med-large hands.
3) It's too light for its use
4) The primary blade is a bit short for practical use

Overall Shun knives are great blades, exotic, elegant, and a great collection for a home chef. The Shun chinese blade however, can endure light use in the long-run. There are other great choices out there, so look around.

This is a great knife. It's a very handy, usable size, sharp, and a good weight. It's perfect for slicing meats, such as ham or a firm roast. It is also a good size for chopping vegetables or nuts. It is dishwasher safe but I would hand wash is just to avoid dulling. If you don't have hundreds to invest in quality knives, this is a nice, reasonable alternative. Seki Magoroku Series 8-Inch Chef's Knife Right now


I enjoy all of the Seki Magoroku series knives. This one is no exception. It is beautifully crafted and holds edge well.

The handle is D-shaped for comfort. It has similar but not the same shape as Shun knives that are also made by KAI. Because the handle is made of wood, it will require waterproofing maintenance. It needs to be rubbed with mineral oil. Rather than using a more expensive special wood care mineral oil, I use mineral oil laxative available from pharmacy for a couple of dollars.

Lowest Price Wusthof Classic Ikon Chef's Knife, 8"



I have knives from the Henckels Pro-S, Sabatier Grand Chef, Wusthof Classic, and Shun lines. I was curious to try the new Wusthof Ikon line, and I have to say, I'm hooked. There is a substantial premium over the regular Classic line of knives, but I'd have to say it's worth it.

Aesthetically, the new design is more pleasing, and has modern, flowing lines. The classic Wusthof red sticker is formed into the blade itself, so no more of the sticker coming off during washing! Also, the tang extends all the way to the bottom of the handle, ending in a sleek metal cap. Lastly, the bolster is much thinner, making the knife easier to sharpen.

Out of the box, my Ikon was as sharp as my Shun Nakiri. A few swipes on my steel made it even more so. After an hour of cutting, I greatly appreciated the new ergonomically designed handle. It really makes prepping much more comfortable. The overall balance is skewed slightly towards the handle, but not noticeably so.

This means that they cut like Japanese knives but are used like German knives. I personally am a big fan of Japanese knives and have moved away from German knives with the exception these. I use this knife as a mini slicer. It goes through meats with ease. I have large hands and the shape of the handle is perfect for me. I've been using Forschner's 8-inch chef's knife for a couple of years now (and have owned Wustoff and Global too). I like the 8-inch knife, but it is unusually wide at the base, causing some foods to cling to the knife, and it does not taper as sharply at the tip. The 9-inch knife solves both problems. It has a more traditional width and tapers nicely, making it more versatile in the kitchen (don't need to reach for a paring knife to core a pepper for example). If you're thinking about the justly regarded Forschner chef's knife, I would recommend this one over the 8-inch. Not a bad product -- having given one a whirl, I can say that it's nicely sharp when new and that the fit and finish are excellent -- the knife looks and feels good.

Huge BUT though -- I don't know why you'd drop three figures of $ on a knife with a full-length bolster. That's a terrible design and it's near-shameful that a company like henckels is still using it years after the japanese showed how unnecessary it was, serving only to get in the way of sharpening and cut down the blade's useful lifespan. And having done a little bit of research, I cannot find information about the steel used for this blade anywhere. It's obviously high-carbon stainless, but I can't find a single detail about composition or rockwell hardness. That's pretty shady. And probably because much cheaper knives are being made of steel of the same quality.

The bottom line is that though this is not a bad knife -- a heck of a lot better than what most people have in their kitchens -- there are comparable knives selling for much less and much better knives selling for the same price (or even less - MACs and Tojiros come to mind).Get more detail about J.A. I always had great experience with Victorinox knives. This chinese cleaver was very sharp like all Victorinox knives. It cuts through carrots like butter. The blade is very thin so it might appear to be flimsy. The thin blade makes it very light, which is great if you do alot of chopping. Do not use this knife to cut through bones or other hard substance. It is great to chop vegetable and slicing meat. When you wash it, water tend to collect in the handle. the handle needs to face up in order for the water to drain. Overall, this is great value for everyday chopping and dicing. It may appear not well constructed but is comfortable enough to use. It has not fallen apart on me yet. If you like a lightly constructed knife with a very sharp edge, this is the knife for you. For the price, this is a good starter knife for someone new in the usage of the chinese cleaver. Once you get use to it, this maybe the only knife you will be using.
