
This knife is the workhorse in my kitchen. It is beautifully balanced where the bolster meets the handle, so the knife does the work. I keep my knives very sharp, this one holds a near-razor's edge through several meal preps. I use it for slicing fruit, vegetables, and meats. You can make very thin, uniform slices with this knife, or chop up a big batch of veggies in no time.
Henckel's doesn't make a bad knife. The Zwillings JA Henckel line are their best knives made in Germany; the JA Henckels line are their budget knives. I favor the Professional "S" line because they fit my hands comfortably and have the right balance.
The best way to sharpen a knife is on a stone, but this takes skill and practice.
