Buying Kyocera Revolution Series 7-Inch Professional Chef's Knife, Black Blade
Firstly, let me admit I do not own this knife. I own a number of highquality Japanese steel kithcen knives, which I sharpen my self at home for our domestic kitchen use.
My experience of the Kyocera Revolution was at a promotional demonstration in a knife shop, where we (customers) were able to use the knife on a variety of vegetables and fruit.
I tried the knife out on all of the veges. Gave it a bit of a typical kitchen workout in fact.
The result was that, although the ceramic knife did cut all the veges satisfactorily, it still did not feel as sharp as my own steel knives at home. The ceramic knife actually felt like it was in need of sharpening by comparison.
Later, I did a direct comparison at a friend's place. He had just bought a Kyocera Revolution knife and asked me around for an in home demo and comparison to my japanese steel knives (I took 2 knives - Hiromoto AS and Global brands).
Same result - the ceramic cut well, but was just not as sharp and did not cut as well as the steel knives.
Based upon my experience I did not and would not buy this ceramic knife.
Quite simply this ceramic knife is not as sharp as my Japanese Kitchen knives at home.
It seems that ceramic is just not a suitable material for making really sharp kitchen knives. From looking at the knife, it did not have the very thin edge of Japanese steel knives. Also, I suspect that the manufacturers have not yet found a way to grind or hone a really fine cutting edge.
By contrast, a good Japanese knife made of for example VG10 steel, or Hitachi AS carbon steel, can be sharpened to an edge sharpness of 0.5 micron. That is very very sharp - sharper than a razor blade, and ordinary people (not experts) can sharpen JAPANESE steel knives to this level at home.
Also, the ceramic knife is brittle and chips are inevitable even if you baby the knife. And it will get blunt, and then you need to send it away to get sharpened.
I suspect that the popularity of ceramic knives is testimony to the fact that many households and kitchens in NZ, USA, Australia and Europe, have simply never experienced the incredible sharpness of a decent Japanese steel kitchen knife, and have become tolerant of sub standard kitchen knives with poorly sharpened edges. Mostly these knives would be of Eurpean origin, and are softer steel than Japanese knives.

Buy Global 8-Inch 20cm Cook's Knife
It's a big step to be willing to pay this much for a knife. But if the price didn't deter you from considering it, this is a FANTASTIC knife.
First - this is my first global, but the handle is fantastic. Made to be held...wonderful feel, nice and light. One of the most common complaints about these is that they are made for small hands....that is actually true. If you have big hands, maybe this actually isn't for you, but if you're female or have small hands, chances are you will long it!
Great balance...my first slice was on a head of cabbage and that was all it took to fall in love. I practically gave it no push at all...it just slid down like the cabbage was not meant to be whole.
*L* the biggest problem I have seems to be not dicing everything. This knife is just such a wonder to use that it's hard NOT to want to use it. I sometimes switch between using it and my Chicago Cutlery (which admittedly I used to think was pretty good...and it is not bad. I keep it sharp. But it is NOT this knife) just so I can remind myself what a wonderful step up.
Blade will take on anything. Meat, vegetables of all measure soft or hard. Food sees this knife coming and almost seems to politely separate itself :)
Seems to be holding an edge well...came sharpened (which is not always true of good knives) so I used it for a number of times before sharpening again. Needs sharpening after maybe every 6-8 meals? That's pretty good compared to some of my knives that need it every time. Cleans nice (do I even have to say it's a hand clean only? If you don't realize this...um, please do learn it before you get entrusted with one of these), no discoloration.
Beautiful, beautiful knife. It was my favorite from the first time I held it in my hand and took that first cut. Rests as a "prize" on the board that holds a couple of Shuns, a MAC, a Henkel, a Victorinox, and a Cutco. Some of the others compare to the cut, but between that and the feel of holding it, this one is the one that I love.

A decade or so ago I purchased a whole flock of F. Dick knives as I went into culinary school. Without a doubt that was probably one of the best investments I EVER made! Hands down. F. Dick markets to culinary students & schools for two very good reasons: 1) They then don't need to spend a fortune in advertising, trying to get housewives & wannabees to buy their knives...just to show off the new toy to their friends & neighbours. (Or brag about how much they spent.) 2) They're darn near bullet-proof...and thus perfect for students, working chefs or home users that aren't going to sharpen their knives every couple months.
I purchased my "regular" 9" before I had seen the Competition Knife...and being a student had to go without.
Well, seeing as I've have NOTHING but high praise for their knives I decided to finally get the competition knife. Have I used it in a competition..? No... But, along with being another OUTSTANDING F. Dick knife it really is a very cool conversation piece. My wife & I have a lot of "foody" friends and this still is the most popular piece of equipment that we have in out kitchen...and we have a LOT O' TOYS in our well stocked kitchen. It seems that everybody want to test their skills with it. ROFL (And it's still less than some of the advertised brands...)
Oh, and for the record... Nobody, and I mean NOBODY makes a steel as good as F. Dick. Go ahead, do a search or better yet ask somebody that knows what they're talking about. They're worth their weight in gold!

I recently purchased this knife from Amazon because I wanted a "smaller" chef's knife to fit my hand. I already own a great Henckel 8" chef knife. This knife, right out of the package, was dull and has a very obvious inferior blade. It doesn't cut well and more than likely could pose a serious danger of cutting your hand or finger. It surprises me that Wusthof would produce something as bad as this knife. So lesson be learned about kitchen knives. A few months ago I took a "Knife Skills" class at a local culinary shop. Everyone who handled the chef's knife was shocked and amazed at its comfort since its design is so unconventional. I got this knife in a set and honestly I don't like it at all. It seems to saw almost tear instead of cut, I believe the serrations are fare to pointed. When it comes time to sharpen you can't really even do that, your basically just sharpening the point of the serrations. Even when freshly sharpened the blade is vary thick which makes it hard to move though the food your cutting. On top of this, one side is totally flat making a straight cut in fibrous or dense things difficult because it wants to follows the arc of the side that's curved.

We ordered these knives (8- and 10-inch) for our restaurant kitchen back in 2006 and it was a decision we quickly came to regret: they didn't hold up well at all under the stress of daily use and we were out a lot of money. The handles discolored after the first month and being unbalanced (blade-heavy), they made your fingers ache after a while. On top of that, we spent more time sharpening and resharpening them than actually cutting. In the end our frustration led to throwing them out. We didn't feel right donating them to a charity kitchen given their inherent flaws.
Chef's Choice is a low-end sharpener company that delved into the knife business a few years back and garnered a handful TV-celebrity chef endorsements. This is a knife for the Rachel Ray/Emeril/Paula Deen crowd at best. Since then, that crowd has moved on to even cheaper knives. Blade hardness is only one of many factors that comprise a good knife. That 60Rc rating that hacks like Chad Ward ("An Edge in the Kitchen") promote actually works against you in the kitchen because you're ALWAYS sharpening this knife because it's so brittle! But Chad likes it so much his book is virtually a Chef's Choice marketing pamphlet. Chad's book only recommends you use three knives in the kitchen, and of those three, he finds no value in Santoku knives. That alone should tell you he's a reporter, not a chef, and his book is composed of outdated and misguided information about the knife industry.
Take it from someone who's worked in professional kitchens and restaurants for a lifetime, skip this knife and skip this brand. Your hard-earned money is better spent elsewhere. Also, I could care less where my knives are made. Where To Buy Chroma Type 301 5-Piece Knife Block Set
I bought this set last Christmas on eBay for a lot, lot less. All the knives and the block are made in China. I was leery at first, but to my surprise the knives have held their edge after much abuse. Razor sharp!
The handle is well balanced and comfortable to hold. I don't know the exact detail of this alloy (301 steel, and 18/10 stainless) versus other brands. Under careful inspection, you can faintly see where the handle is fused to the blade. Thus I know the knife is not machined from one solid block of metal. So their claim is true?! The blade is brittle so try not to bang the blade against a harder material. Over all, I am very satisfied with the set (for what I paid for).
The only "Porsche" I may ever be able to afford in my life...

The knife edge has a very pronounced curve, the 'belly' of the knife doesn't transition to a straightened out 'edge' before ending up at the 'bolster'. This may be a great feature if you rock the knife alot mincing herbs and vegetables, but I personally prefer a more traditional chef's knife profile where the 'edge' of the knife is more flat creating a longer cutting edge that is actually in contact with the board. When you place the edge of the "Ultimate Cook's" knife against the cutting board, you will see that at any angle, very little of the knife's edge is in contact with the board.
What I noticed when quickly slicing, dicing, and chopping various vegetables (green onions, bell peppers in my case), was that I was not completely slicing through items that were closer to me. Because of the continuous curve of the 'edge', items closer to the bolster weren't getting cut completely. You really have to adjust your slicing motion to account for part of the blade / edge that you might say is missing from a traditional chef's knife or santoku.
Bottom line, I am happier with the 8" Shun Steel Chef's Knife. The U-Cook's knife is beautiful, sharp and well made, but it did seem a little blade heavy. Togiharu Virgin Carbon Steel Chef's Knife - 9.4" (24cm) This instant
I took the next step to full carbon steel versus high carbon stainless (HCS). I have other Togiharu knives and knew that the fit and finish would be very nice. Indeed, this gyutou is beautiful but also very functional.
The whole knife is light for its size and well balanced. The edge is thin and holds its shape very well. It is like an oversize scalpel.
The down side to carbon steel versus HCS is the staining aspect. Some foods change the color of the blade while others can give it actual rust quite quickly. I have to always clean it right after I use it. In fact, Bar Keepers Friend does a great job in shining it back up.
I know that some chefs prefer carbon blades but I wonder how they take care of them while using them throughout their shift. I'm certainly glad I bought the Togiharu Virgin Carbon Gyutou. It's one great knife and I'll continue to take care of it to keep it that way.

Chroma Haiku Yakitori 4 1/4 inch Small Chef Knife Immediately
I bought one of the paring knives and the little Deba knife just to see what the quality of the steel was like in them. I was quite impressed with what I received.
Out of the box both were quite sharp, after a little time on a good stone, hard Arkansas and a black finish stone, the knife holds an impressive edge and retains it fairly well through normal kitchen use.
Obviously the blade is stamped and ground to shape but the fit and finish of the blade and handle are very good and I find these little knives quite handy around the galley for most lite duty chores. Cutting veggies, slicing up stew meat and other lite duty work both knives are great.
I even disassembled a frying chicken as a test to see how they stood up, keep in mind I didn't chop bones but rather sliced through the joints and I split the breast with a larger knife as well, the knives did quite well working out of their league.
You can't go wrong for the price and you will find these a nice addition to your kitchen.

PROS:
This is a good general-use knife and is sharp enough to chop most vegetables and meats... It also has a pretty good and comfy handle.
Easy to resharpen and remove dings on a whet stone due to soft metal.
CONS:
Very flimsy and soft metal is used in the knife's construction. I have seen this knife's blade dent because of cutting a simple thing such as a prailine (which a standard Whustof or Henkels would not do for not much more money).
OVERALL:
This is absolutely an ameture housewife knife. NOT good for industrial work at all. It is, though, a decent "back-up" knife if there is something to hack-up that you dont want your more expsneive knives (assuming the reader works in an industrial kitchen) to touch or possibly get damaged.
My advice, pay an extra 20 bucks and buy a low-mid range Whustof or Henkels... something that is not stamped steel and has a full tang.
