I am very unhappy with this product. It mentions that it covers a 8 inch Chef's knife, but it barely covered my knife and slipped off very easily. The guard has a tendency to slip down onto the handle and expose the delicate tip of the knife that is most prone to damage. It seems to be made of cheap plastic and it is definitely NOT worth the 8-9 bucks after shipping costs. I contacted the seller 3 days ago with no reply, and I just filed a claim with Amazon (sigh). First let me say I'm a Wusthof fan, I love this line of knives. In general I'd say you absolutely can't go wrong with the Classic Ikon. It's balanced well, holds an edge, and has a wonderfully ergonomic handle. However, the 10" Chef's Knife misses the mark. The heel of the blade should be much deeper, or taller if you will. It doesn't seem much taller than the 8" Chef's Knife, which in essence defeats the usability or functionality of the extra length. Don't shy away from the Classic Ikon, it's an incredible knife! I'd heard good things about the Mundial 5100 series, so when I saw this 6" chef's knife for less than $20, I grabbed one. The 5100 series is made in the style of traditional German knives -- for example, the Wusthof Classic series. In comparison to the Wusthofs I own, this Mundial knife is distinctly beefier, but not as perfect in finishing. The blade of the Mundial is thicker than the blade of my Wusthof Classic 7" Chef's Knife; the Mundial weighs 210g, while the (slightly longer) Wusthof weighs 170g. The joints between the black plastic handle and the steel bolster are not as "seamless" on the Mundial as on my Wusthof knives, and there is more asymmetry between the right and left sides of the handle on the Mundial than on my Wusthofs. For the sake of comparison, if I rate my Wusthofs 9.5-10 in quality of finishing, this Mundial would rate about 8.5. The Mundial is still a nice knife... it is better made than Chinese knives made in the German style that I have seen. Chinese cleaver


I always had great experience with Victorinox knives. This chinese cleaver was very sharp like all Victorinox knives. It cuts through carrots like butter. The blade is very thin so it might appear to be flimsy. The thin blade makes it very light, which is great if you do alot of chopping. Do not use this knife to cut through bones or other hard substance. It is great to chop vegetable and slicing meat. When you wash it, water tend to collect in the handle. the handle needs to face up in order for the water to drain. Overall, this is great value for everyday chopping and dicing. It may appear not well constructed but is comfortable enough to use. It has not fallen apart on me yet. If you like a lightly constructed knife with a very sharp edge, this is the knife for you. For the price, this is a good starter knife for someone new in the usage of the chinese cleaver. Once you get use to it, this maybe the only knife you will be using. I have been buying Kyocera knives not only for myself but as presents to members of my family. So far the only comment I have heard is that they are scared they might break the knife (they actually did). But in case you do also break yours, you can email Kyocera customer service and you can send it over to them to have them repair it if the damage wasn't too great.

This knife is really sharp, just like what the earlier poster had said, but just like any other knife, this one also dulls after repeated use; although way longer than typically a steel knife would. In the case this happens, you can also send the knife to a Kyocera ceramic facility and they can resharpen the edge of the knife for you for a minor fee.

I actually use 2 knives at home. This one and a steel one. If I need to cut meat (bone-free), I go for this knife. If I need to slice things up that has bone hard parts, I grab my steel one.

I got this along with 6 other knives in the under $200 a set range, its definitely at the top of my list, an excellent knife. I have washed in the dishwasher many times with electrasol gel "all in one" packs, no rust or spots. I wouldn't wash in a dishwasher that did not have a drying cycle, nor would I pre-soak in sink/glass as hi carbon will rust if you keep it wet long enough. I set it on a plate and it goes right in the dishwasher

Pros: well designed, simple, can be VERY sharp, holds edge well, eno rust or spots in dishwasher.

Cons: came fairly sharp, but needed sharpening

Calphalon Contemporary 8-Inch Chef's Knife Immediately


If you're reading this review, either you cook alot or are buying for someone who does.

I started with the Calphalon Santoku which is an excellent knife but more suited for certain styles of slicing/cutting (think widely applicable for prepping Asian cuisine whereas the Chef knife is in line with American/European) leading me to this knife. Steel is fairly good quality and holds its edge well. It is well-balanced for high speed chopping with a full-tang in the handle. The grip on the handle is ergonomic for slicing/chopping, however it may not have enough "grip" on the surface if you want more heavy duty chopping (in which case you should be using a different knife).

This was my first twin cuisine knife and my first santoku.

I have to say that I'm very impressed with it.

PROS
-heavy (really helps when cutting)
-very good for mincing
-great for sushi but this thing cuts anything
-strong
-beautiful
-durable
-comfortable handle
-the weight makes it great for handling bigger jobs or for cutting firmer vegetables (well for me at least).


CONS
-the balance is nonstandard for me (the handle is heavy)....don't know if this is just because it's a santoku (are they all handle heavy?). Overall, not a big deal just takes a bit of getting used to.
-the handle has cracked on the top half (hairline but there) -- never been dropped or machine washed. I don't know if there's a warranty item on that, I'm going to check. If there isn't I'll probably wind up getting the PRO S line or another more traditional line (that's why it got dropped on star)

J.A. Henckels Twin Four Star 6-Inch High Carbon Stainless-Steel Chef's Knife Decide Now


This has been my favorite knife for years -- I had it so long I can't recall when I got it. I already had an excellent set of Sabatier knives, but the handles were a bit thin and had somewhat sharp corners. One day I had occasion to use a Hencklels Four-star, and instantly fell in love with the voluptuous handle. It felt soooo good in my hand. Note that I have largeish hands, if you have smaller hands this might not be the knife for you.

I already had a 10" chef's knife, so I chose this 6" "sandwich" knife (that's what they called it back then). It has been my workhorse for years. I can put an edge on it that will shave hairs off my arm (but not quite off my face :-). Alas yesterday the blade snapped while cutting a sweet potato. No bending or twisting, just pressing down pretty hard, and bing! Mind you it had received daily use for well over a decade, if not two.

Now that I have to replace it, I think I'll go with an 8" blade. This 6" size was just a tad small for general purpose use, and I have plenty of other smaller knifes. I may get the 8" equivalent of exactly this knife, but am also considering the Wsthof Grand Prix II 7-Inch Fine Edge Santoku Knife. I'm hoping that design will keep my knuckles from bumping into the cutting board.

My wonderful husband got this Shun 8" chef's knife as well as the 7" Santoku knife for me for Christmas this past year. I was thrilled to receive these, as I love to cook, and my tools weren't quite up to par. My prior knives were the Henckels Four Star knives - I had the Santoku, paring, and chef's knife in that line. While they were good knives at the time, now that I have my Shun knives, I'll never go back to another German brand!

These knives are razor sharp - They slice and dice with ease. They look great and they feel great in my hands. I'm a woman with quite small hands and these knives fit comfortably in my hands, unlike my larger handled Henckels.

The Wusthof Gourmet knives are "stamped" out of a larger sheet of metal. The Wusthof Classic knives are "forged" and are therefore much stronger, more durable, and stay sharp longer. They also feel a bit heavier and thicker to me, which makes cutting easier. They're more expensive, but are worth it in my opinion. These knives are my favorite. Everyone will have a knife they like better than others, and if seems like Henkels show up a lot. I prefer these because the blades feel a little better balanced and the handles fit my hand really well. The solid handles of the Grand Prix series don't have the ridges and rivets where crud can get stuck like the Classic line does. Also of note, the only difference between the Grand Prix I and II is the handles: specifically the little ridge at the end of the handle on the I that was smoothed out in the II. I actually prefer the I, but I have small hands. Those with larger hands will probably favor the later version, which is likely why they changed it. To my knowledge, though, everything else about the knives is the same. All in all, great blades. Sharp as razors, and easy to keep sharp with only period use of a steel. Save Rada Cutlery French Chefs Knife, Made in USA, Dishwasher Safe Black Handle


I bought this for 3 reasons:

1) NOT made in china.... this is made right here in USA !!!

2) Dishwasher safe... because this is quality American stainless steel, it does not rust from the dishwasher like the chinese-made garbage. With ANY knife from china, even if it CLAIMS to be dishwasher safe, it will still rust or melt or have corroding rivets... but not with this American-made knife. It has been through my dishwasher several times with no signs of rust!

This is the best knife I have ever owned. I have a set of Chicago Cutlery knifes and this is far better than any of them. Of course it cost more than three of the others put together but it is well worth every penny. Cheapest Kuhn Rikon Colori Nonstick Chef's Knife, Blue


I can't say enough good things about this knife. It will slice grapes with just the weight of the blade alone.
