Where To Buy Mundial Olivier Anquier 6-Inch Chef's Knife


A couple of months ago, I had purchased this item at a discount store because I needed to take a knife on a family vacation to the beach. We used it all week at least for lunch and dinner and the blade was still really sharp which says a lot because we had to prep quite a bit of vegetables. Since then I have tested recipes for 4 8-course vegetarian cooking classes with this knife, in addition to daily cooking, and it is still very sharp. It will easily cut open a large butternut squash and can slice a very ripe tomato without squishing it. I don't expect I'll have to buy another one any time soon, but I would recommend this knife to anyone who cooks alot, has to do a lot vegetable prep, and doesn't like to replace kitchen equipment very often.

I own an older 'non hollow' version of this knife. I guess the hollow groves are so that vegetables don't stick. Mine seems to work just fine without the hollow groves. I am very impressed by the quality of the Henkels Four Star series. The ice hardened blade is very sharp. It does need a sharpening steel for regular maintenance. The blade is great for cutting raw meat and vegetables, but a bit thin for chopping frozen meat or bone. It's not a Cleaver. The one piece handle is very durable and dishwasher safe. I don't have to worry the handle coming loose. I was worried about that with the Five Star series. The Santoku shape is very versatile. I considered buying other Henkels knives, but this one is so versatile that I don't really need to. I purchased this knife not from Amazon but directly from the company. It's sharp and it stays that way. I keep a honing steel handy but I seldom use it with this knife. The slightly narrower blade allows you work the knife easily into tight working areas allowing you to surgically dissect a chicken in almost no time. It is also very well balanced. I haven't had the need to file down the copper end yet but I believe that some people will find it quite useful. Wenger Swibo 11-Inch Butcher Knife, Large Blade Order Now


I bought the 14" knife with no particular use in mind. It is much lighter than I expected, and surprisingly well balanced. The stout handle is attached solidly, molded on, not riveted. It's doesn't seem to be a good fit for someone with small hands.

The fit and finish are just superb, and the polish on the blade makes it look like a work of art. The handle color is not "bright yellow" though, it is safety orange. No way it is getting lost in a kitchen or outside cutting up game. This is a slicing knife, I suspect it's too light to be useful for hacking through a bone or opening a coconut. Discount Togiharu Molybdenum Petty - 5.9" (15cm)


Looking for a thin compromise between a 4" paring knife and a full-size santoku or gyutou, I ordered the Togiharu Moly petty. It is a truly beautiful knife. It is shaped like a gyutou so it can pierce effeiciently but it is narrower from edge to spine. The thickness of the blade is very thin as well. Overall, the petty is super light.

My wife has small hands and is uncomfortable with larger blades. This was nearly the perfect knife for her to do cutting chores easily without becoming nervous about a large edge.

The steel holds and edge very well and is truly stainless. It is quite easy to maintain. I find myself reaching for this knife, sometimes in place of paring knives, sometimes in place of a gyutou. It's a truly versitile knife and buying from Korin is a pleasure.

I would encourage the reader to consider buying a modern Japanese knife (actually made in Japan) instead of a European (like a French chef's blade) styled knife. I'd heard good things about the Mundial 5100 series, so when I saw this 6" chef's knife for less than $20, I grabbed one. The 5100 series is made in the style of traditional German knives -- for example, the Wusthof Classic series. In comparison to the Wusthofs I own, this Mundial knife is distinctly beefier, but not as perfect in finishing. The blade of the Mundial is thicker than the blade of my Wusthof Classic 7" Chef's Knife; the Mundial weighs 210g, while the (slightly longer) Wusthof weighs 170g. The joints between the black plastic handle and the steel bolster are not as "seamless" on the Mundial as on my Wusthof knives, and there is more asymmetry between the right and left sides of the handle on the Mundial than on my Wusthofs. For the sake of comparison, if I rate my Wusthofs 9.5-10 in quality of finishing, this Mundial would rate about 8.5. The Mundial is still a nice knife... it is better made than Chinese knives made in the German style that I have seen. Considering that the Wusthof 6" Chef's knife is currently $100 at Amazon -- a five-fold difference -- the Mundial deserves 4.5 stars for high quality at a very good price.
